Meatloaf Variation

Ingredients

Sauce

    • 1/2 cup ketchup
    • 1/3 cup brown sugar
    • 1 1/2 teaspoons mustard
    • 2 tablespoons cider or red wine vinegar
    • 1/2 teaspoon nutmeg

Meatloaf

    • 2 pounds ground beef
    • 2 eggs
    • 1 cup cornflakes
    • 1/4 teaspoon salt
    • 1/2 teaspoon pepper
    • 2 tablespoons minced parsley
    • 1/4 onion, chopped

Instructions

  1. Mix the sauce in a small saucepan.
  2. Mix the ground beef, eggs, salt, pepper, parsley and onion in a bowl.
  3. Stir the cornflakes and half of the sauce into the ground beef mixture.
  4. Shape the ground beef into a loaf on a baking pan.  A baking pan with raised sides is preferable to keep any liquids from spilling into your oven.
  5. Bake at 350° for 1 hour.
  6. Warm the remaining sauce for a few minutes.
  7. After the loaf has baked for 40 minutes, pour the remaining sauce on top of the loaf.
